To prepare the dough according to the recipe, you need the following ingredients:

  • three glasses of flour;
  • 50 gr. honey;
  • 100 ml medium thick sour cream;
  • 100 gr. oils 80% fat;
  • testicle;
  • 3 large spoons of cognac (can be replaced with another alcoholic drink);
  • 50 ml water;
  • large spoon of cocoa powder.

If desired, you can add spices.

To make the glaze (icing), mix the egg white with a glass (or a little less) of powdered sugar.

In addition to the dough and icing, you will need paper and a pencil with a ruler.

Step-by-step instruction:

  1. Draw a sketch on a piece of paper.
  2. Cut out the pieces with scissors.
  3. To make the dough, sift the flour through a sieve.
  4. Dissolve honey in heated water. Let the mixture cool slightly (maximum to 39 degrees) and add 1/2 of the sifted flour, mix all the ingredients well with a wooden spatula so that there are no lumps.
  5. Leave the dough to cool, but be sure to cool in the room.
  6. Beat the egg in a cup. Then pour it into the dough and knead again.
  7. Add other ingredients to the dough (sour cream and butter, alcohol and spices).
  8. Add the rest of the flour and add 1 large spoonful of cocoa powder to color the dough.
  9. Knead the dough so that it does not stick to your hands and the table, roll it out to a maximum thickness of 1 cm, apply the pattern and form the elements of the house.
  10. In an oven heated to 220 degrees, bake all elements for 10-12 minutes.

Preparing the glaze

In the recipe, the amount of ingredients is indicated per serving. And for the New Year's house you will need three servings (the egg should be large).

Separate the whites and mix them with a fork (do not beat!).

Slowly add the powdered sugar, two small spoons at a time, and mix again.

It is important that the prepared icing is not very thick; if necessary, dilute it with a small amount of chilled water (a small spoon will be enough).

Decorate the cooled roof parts with glaze. If you want, you can first make a template on a checkered paper sheet, and then a cornet (food paper is used to form it). The cornet is filled with glaze (a grid is applied, and after cooling, a pattern is applied).

  • powdered sugar – 150-200 g.

Step 5. Cover all the details of the house with icing, using a toothpick or stick to help you, making circular movements to better distribute the icing. It is best to leave the glaze on the roof and walls overnight until completely dry. In the morning you can apply patterns of snowflakes or beaded dots.

Step 6. Apply icing diluted with food coloring to Christmas trees and other gingerbread figures.

Assembling a New Year's gingerbread house

Step 1. Cut the edges of the walls slightly at an angle of 45 degrees to better connect them to each other.


Step 2. After applying glaze to the seams of the walls, connect the house. Use cups of water to support the walls until the glaze hardens.

Step 3. When the seams of the walls have hardened, attach the roof in the same way, placing supports so that it does not “move away”. After 4 hours, you can finish decorating the house at your own discretion.

Step 4. It would be a good idea to use the glaze to make icicles by squeezing a thick drop onto the edge and then stretching it along the length of the roof. Snowflakes can be made by first drawing them with icing on film.

Assemble the house completely, attach the roof.

Process:
Beat softened butter with half the sugar. add soda (do not extinguish) and honey.
Beat the remaining sugar with the egg until thick foam, combine with the butter mixture. add spices, zest, flour and mix until smooth. Wrap in film and refrigerate for at least 30 minutes.

While the dough is resting, draw templates on cardboard and cut them out. if there are cuttings of the required shape - great, things will go faster.
If you decide to make a gingerbread house, I advise you to cut out all the parts from cardboard and make sure that they fit together :))

Break the caramel into small pieces with a hammer. maximum size is a pea, minimum is dust :)

Pinch off a piece the size of an orange from the rested dough and roll it out, sprinkling with flour, to a thickness of approximately 3 mm. Apply the template and cut it out with a sharp knife.   3. Once the templates are prepared, we begin kneading the dough. Mix the softened butter with sugar and beat with a mixer until a soft and fluffy mass is formed. Add liquid honey and beat again.
  4. In a separate bowl, mix the dry ingredients: ginger, cinnamon, cocoa powder, baking soda and 100 g of sifted flour.
  5. Add the dry mixture to the oil mixture in portions, stirring. Gradually add flour and knead the dough.
  6. We adjust the dosage of flour during kneading: it may be needed a little more or less than indicated in the recipe. The dough should be soft and slightly crumbly, not sticky to your hands. Roll it into a ball and place it on the refrigerator shelf for 20-30 minutes - after cooling, the dough will become more elastic.

  7. Roll out a thin layer on parchment paper and cut out parts of the future house using the templates. We make sure that the thickness of the layer does not exceed 3 mm! If you make the layer thicker, the dough may remain loose inside, and the workpieces will not be strong enough. In addition, the finished house can simply collapse under its own weight.
  8. Carefully transfer the parchment with the parts to a baking sheet. We decorate the windows of the house with caramel. To do this, grind it into fine crumbs, for example, placing it in plastic bag and tapping with a chop mallet. Place caramel crumbs in the “windows”. When exposed to temperature, the caramel will quickly melt, and the windows will become colored, as if the lights were turned on in the house.
  9. We bake the components of the house for about 8-10 minutes at 180 degrees - do not overbake! Freshly baked dough will be soft at first, but will then harden very quickly.
  10. We collect the scraps of dough and bake cookies using molds in the shape of Christmas trees, deer, people, etc. By the way, ready-made cookies can also be used in the design of the house.
  11. When all the component parts are completely ready, we begin to “assemble” the gingerbread house.

  12. We will glue the parts of the house together using caramel. To prepare it, pour sugar into a fireproof container with a thick bottom and add drinking water. Stirring, bring to a boil over medium heat.
  13. Continuing to stir, cook the sweet mixture until golden brown. To check readiness, take a small amount of syrup and place it in a container of cold water. If a solid caramel forms after a couple of seconds, the syrup is ready!
  14. Now let's move on to the most important stage. Carefully, so as not to get burned, dip the parts of the house end-to-end into hot caramel and quickly fasten them together. First, we glue the side wall and facade together and attach them to the base.
  15. Then we attach the second side and the back wall of the house. You need to work quickly, as the caramel hardens very quickly. At this stage, it is better to get an assistant, since it will be difficult to hold the house together alone. To prevent the unused caramel in the bowl from hardening, it is better to cover it with a lid and periodically warm it up over low heat.
  16. Last but not least, we attach the roof. Leave the formed house for about an hour.

    How to make gingerbread house frosting

  17. Mix cooled raw protein with lemon juice. Beat until white foam is obtained.
  18. Add sweet powder in portions, without ceasing to work with the mixer. As a result, the whites need to be beaten into a stiff mass, otherwise the icing on the house will not harden. If necessary, increase the dosage of powder.

  19. Place the glaze in a plastic bag and cut off the tip. Carefully process the gluing areas to hide traces of caramel. We apply glaze to the roof, and then attach chocolate pads to imitate tiles. If desired, we complement the house with any confectionery toppings. You can also use the glaze to form “icicles”. If the consistency of the glaze is correct, they will hold their shape well and harden quickly.
